Alkaline Thai Lettuce Wraps

This blend of crunchy, sweet, and spice will have you in mouth heaven. So easy to make and absolutely delicious!

Yields: 4 servings | Prep Time: 5 mins | Cook Time: 20 mins |Total Time: 25 mins


  • 1 onion, diced

  • 1/2 shallot, diced

  • 1 orange bell pepper

  • 1 red bell pepper

  • 6 white mushrooms

  • 3 green onion stalks

  • 1 handful walnuts, crushed

  • 2 tsp. lime juice

  • 1 cup wild rice, cooked*

  • 1 Tbsp. coconut aminos

  • 1 tbsp ground ginger

  • 1 tsp. red pepper flakes*

  • 2 Tbsp. sesame seed oil

  • 1 head bib lettuce or butter lettuce or romaine

  • Sea salt and cayenne pepper to taste

  1. Heat sesame oil in a large skillet over medium heat. Add onion, red and orange peppers, and shallot. Sauté for 2-3 minutes, or until the onion is translucent.

  2. Add mushrooms, cooked wild rice (if using), and crushed walnuts and sauté for 3-4 minutes, stirring frequently.

  3. In a small bowl, whisk together lime juice, coconut aminos, ground ginger, and crushed red pepper flakes. Pour mixture over mushroom meat and stir to coat. Season with salt and pepper.

  4. Sauté another 2-3 minutes or until mushrooms have released their water and sauce begins to thicken.

  5. Transfer to a serving platter with the lettuce. Spoon about 2 tbsp of mixture into bib lettuce, wrap and eat.



  • There are many ways to make alterations to this dish to fit your like. Not a fan of mushrooms leave them out and/or substitute them for the wild rice. Not a fan of nuts, just omit them. Trying to stay gluten free, leave out the rice or use some chickpeas instead. It's really all up to you!
