No-Bake Apple Pie Parfaits

Description:

No-Bake Apple Pie Parfaits, very much like the real apple pie dessert yet this recipe is no-bake, served in a cup, and of course, completely alkaline. Not too heavy and full of flavor! Simple and easy – and so very delicious!


YIELDS: 4 people | PREP: 10 mins | COOK: 12 mins | TOTAL: 22 mins


Ingredients:

FILLING

▢ 4 apples - peeled, cored and diced

▢ 1/4 cup date sugar or agave

▢ 1 1/2 tsp ground clove

▢ 1/2 tsp ground ginger*

▢ 1 cup spring water

▢ 1 tbsp Agar Agar* or 2 tbsp approved flour


CRUMBLE

▢ 1/2 cup chickpea or spelt flour

▢ 1/2 cup ground walnuts (walnut flour)

▢ 3/4 cup rolled spelt oats

▢ 2 tbsp date sugar

▢ 1 tbsp agave syrup

▢ 1/4 cup chopped walnuts

▢ 1/4 cup coconut oil, cold

▢ 1/2 tsp ground clove

▢ 1/4 heaping tsp Pure Sea Salt

▢ 1 teaspoon spring water, if needed


WHIPPED TOPPING

▢ 2 cups whipped coconut cream (see notes)

▢ 1 tbsp agave nectar

▢ 1 tsp vanilla extract*

Preparation:

FILLING

  1. In a medium saucepan - combine the diced apples, date sugar, clove, 1/2 cup water (*Warning* NOT the whole 1 cup of water!) and 1/2 the Agar Agar.

  2. Cover and cook for about 8-10 minutes over medium heat, stirring every minute.

  3. Mix the other half of Agar Agar with the remaining 1/2 cup water and gradually combine with the apple mixture, constantly stirring, for about 1-2 minutes, or until the preparation has thickened.

  4. Set aside and let cool for at least an hour.

CRUMBLE

  1. Combine the walnut flour, spelt flour, date sugar, chopped walnuts, coconut oil, clove, and Pure Sea Salt in a large bowl and mix thoroughly with your hands. *Add teaspoon of water if too dry. The mixture should be wet but crumbly.

WHIPPED CREAM

  1. Combine the coconut cream, agave syrup and vanilla extract in a large, cold bowl. Beat on high speed for about 1 minute.

ASSEMBLING

  1. Make sure the apple filling isn't hot anymore.

  2. Start by pressing about 1/3 of an inch of crumb in each glass, then layer about the same amount of apple filling then whipped cream on top of each other. Repeat those steps one more time. Serve cold.

 

Notes:

  • I like to buy a can or two of the coconut whipping cream!

  • Agar Agar is a powder like substance made for sea vegetables. When added water it takes on a more gel like consistency. Most chef's use it as a thickening agent.
