Yields: 1-2 servings | Prep Time: 5 mins | Cook Time: 5 mins| Total Time: 10 mins
Ingredients:
1 cup quinoa, cooked
1 cup kale (or approved veggies or choice)
1/2 avocado, sliced
1 tbsp cilantro, roughly chopped
sea salt & cayenne pepper (to taste)

Preparation:
Mix a generous amount of pesto with some cooked quinoa and sautéed or raw kale (or veggies of your choice. Topped with Avocados, fresh coriander and a Dash of Cayenne pepper.
