Zucchini & Dill Pesto Quinoa Salad w/ Kale & Avocados

Description:

Good to go in 10 minutes, this salad is so simple and absolutely heavenly! Great lunch option. Give it a try!



Yields: 1-2 servings | Prep Time: 5 mins | Cook Time: 5 mins| Total Time: 10 mins

 

Ingredients:

  • 1 cup quinoa, cooked

  • 1 cup kale (or approved veggies or choice)

  • 1/2 avocado, sliced

  • 1 tbsp cilantro, roughly chopped

  • sea salt & cayenne pepper (to taste)

Preparation:

  1. Mix a generous amount of pesto with some cooked quinoa and sautéed or raw kale (or veggies of your choice. Topped with Avocados, fresh coriander and a Dash of Cayenne pepper.
