Cucumber & Roasted Red Bell Pepper Hummus Boats

Description:

A simple and healthy recipe packed with flavor: crispy and fresh cucumber boats with a delicious vegan hummus spread.


Ingredients:

  • 1/4 cup roasted red bell pepper hummus

  • 3 mini cucumbers or 1 regular cucumbers

  • Cilantro, chopped

  • Sea salt

Preparation:

  1. Halve the cucumbers lengthwise. Scoop out the seeds with a spoon (a grapefruit spoon works well) and discard seeds. Drizzle cucumbers with sea salt.

  2. Pipe or scoop the 1-2 tbsp hummus into the center of each cucumber "boat," filling in the center where the seeds were.

  3. Arrange the "boats" on a platter and and garnish with sea salt and cilantro.
